Sweet Potato Gnocchi w/ Maple Herb Butter Sauce

Macros (makes 2 large servings):

510 Calories

Ingredients for the Pasta:

1.5 cups (336g) sweet potato

1 egg

1/2 tsp salt


Ingredients for the Sauce:

2 tbsp (28g) light margarine

1/4 cup (60g) sugar free maple syrup

2 tbsp (30g) milk

1/4 tsp ground sage

1/2 tsp rosemary

1/4 tsp salt

1/4 cup (48g) grated Parmesan


Instructions:

  1. Prep your sweet potato’s by boiling and letting them cool or use canned sweet potato like me and be sure to squeeze out excess water

  2. Beat together (or mash by fork) sweet potatoes, egg, and salt

  3. Slowly add in Fit Flour. About 1/4 cup at a time.

  4. Divide your dough into fourths.

  5. Flour your surface and roll out 1/2 inch diameter logs.

  6. Cut 1 inch pieces from the rolled out dough.

  7. Repeat until all dough is in “gnocchi shape”

  8. Add gnocchi to boiling water for 3 mins. (You will know it’s done when they all begin to float)

  9. Take them out and set aside.

  10. Make the sauce.

  11. Simmer the margarine, maple syrup, milk, sage, rosemary, and salt

  12. Then add your Parmesan and simmer and stir until well combined.

  13. Toss in Gnocchi on medium heat until you get a nice light brown coloring.

  14. Divide portion into 2 and enjoy with a friend! :)
