Directions:
Wet Ingredients mixed in a bowl:
1 & 1/2 cups (360g) pumpkin puree
1/2 cup + 1 tbsp (138g) egg whites
1/4 cup (56g) melted butter
2 tsp vanilla extract
(Use whatever sugar replacements you have but I used…)
3/4 cup (144g) Brown Swerve
3/4 cup (144g) granulated Swerve
Dry ingredients mixed in a second bowl:
1 & 1/2 cup (198g) Fit Flour
2 tsp cinnamon
2 tsp pumpkin pie spice
1 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
Combine. Pour into 9x5 loaf dish. Bake at 350 for 25 minutes. Cover with foil and bake for an additional 30 mins. Enjoy!
