Simple High-Protein Gnocchi

Ingredients for the Pasta:

2.25 cups (504g) boiled potato

1 egg

1 tsp salt



Instructions:

  1. Prep your potatoes by peeling, dicing small, and boiling for 12-15 mins and let them cool.

  2. Beat together (or mash by fork) potatoes, egg, and salt

  3. Slowly add in Fit Flour. About 1/4 cup at a time until your dough ball is formed.

  4. Divide your dough into fourths.

  5. Flour your surface and roll out 1/2-inch diameter logs.

  6. Cut 1-inch pieces from the rolled-out dough.

  7. Repeat until all dough is in “gnocchi shape”

  8. Add gnocchi to boiling water for 3 mins. (You will know it’s done when they all begin to float)

  9. Take them out and toss in your sauce of choice!
