Ingredients for the Pasta:
2.25 cups (504g) boiled potato
1 egg
1 tsp salt
2 cups (264g) FIT FLOUR (1:1 substitution for all purpose flour and has 6x the protein and 1/3 the carbs)
Instructions:
Prep your potatoes by peeling, dicing small, and boiling for 12-15 mins and let them cool.
Beat together (or mash by fork) potatoes, egg, and salt
Slowly add in Fit Flour. About 1/4 cup at a time until your dough ball is formed.
Divide your dough into fourths.
Flour your surface and roll out 1/2-inch diameter logs.
Cut 1-inch pieces from the rolled-out dough.
Repeat until all dough is in “gnocchi shape”
Add gnocchi to boiling water for 3 mins. (You will know it’s done when they all begin to float)
Take them out and toss in your sauce of choice!
