Ingredients:
Cookie:
3 tbsp (46g) Egg Whites
1/4 cup (64g) peanut butter
1/4 cup (56g) light butter
1/2 cup (96g) Swerve Brown
1/2 cup (52g) powdered PB
Filling:
1/4 cup (56g) light butter
1/4 cup (26g) powdered PB
1/4 cup (36g) swerve confectioners
Instructions:
Roll it out cookie dough on parchment paper 1/4 inch in height. I laid down chopsticks next to dough to give an even spread. Throw a little extra Power Flour on top to prevent sticking (if needed).
Use a small lid to a cup about 1&1/2 inch diameter to cut circles. You can leave like that, or to get the Nutter Butter shape, you overlap 2 circles just a little and then take your rolling pin and smooth out until level.
Repeat until you use all dough.
Bake at 350 for 12 min
Let them cool & firm up before icing
