Macro-Friendly Ravioli

Ingredients:


For the Pasta:

2 large eggs


For the Stuffing (adjusted):

-1/2 lb lean ground turkey

-1/2 cup spinach, chopped

-1/4 cup Parmesan cheese, grated

-1/2 cup low-fat cottage cheese (blended until smooth)

-1 tablespoon minced garlic

-1 tablespoon fresh parsley, chopped

-1/2 teaspoon pepper

-1/2 teaspoon onion powder

-1/2 teaspoon garlic powder

-1/2 teaspoon Italian seasoning


Instructions:

1. Make the Pasta Dough:

• On a clean surface, form a well with the Fit Flour.

• Crack the eggs into the center of the well.

• Gradually mix the eggs with the flour until a dough forms.

• Knead the dough for 5–7 minutes until smooth.

• Note: The dough does not need to rest. Immediately knead and roll it out.


2. Prepare the Stuffing:

• In a pan, cook the ground turkey until browned. Add spinach and cook until wilted.

• Remove from heat and let cool slightly.

• In a bowl, combine the turkey and spinach with Parmesan cheese, blended cottage cheese, minced garlic, parsley, pepper, onion powder, garlic powder, and Italian seasoning. Stir until well combined.


3. Assemble the Ravioli:

• Roll out the dough into thin sheets.

• Use a square pasta cutter to cut the dough into squares.

• Place spoonfuls of the stuffing mixture in the center of each square.

• Fold each square into a triangle, then bring the two corners of the triangle together and press to seal, creating a unique stuffed pasta shape.


4. Cook the Ravioli:

• Bring a large pot of salted water to a boil.

• Add the ravioli and cook for 3–4 minutes, until they float to the top.

• Drain and serve with your favorite sauce.
