Little Debbie Cream Pie Copycat (High Protein / Low Carb)

Wet ingredients:

1/4 cup (56g) light margarine

2 tbsp (30g) applesauce

1/2 cup (96g) swerve granulated (or allulose)

1/2 cup (96g) swerve brown

2 tbsp (30g) egg whites

1/2 teaspoon vanilla extract


Dry ingredients:

1 cup (80g) quick cooking oats

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/2 teaspoon salt


Icing (skip if just making the oatmeal cookies):

1/4 cup fat free Greek yogurt

1/2 cup swerve confectioners



First mix the wet and dry in separate bowls.

Combine.

Form 8 4-inch disks (1/2 inch in height)

Bake at 375 10 min

Let cookies cool before adding the filling.


You can also just make oatmeal cookies with some raisins or chocolate chips if you don’t want the icing!

240 calories

23g of protein

20g of carbs

7g of fat
