Instructions:
Wet ingredients:
1/4 cup (56g) light margarine
2 tbsp (30g) applesauce
1/2 cup (96g) swerve granulated (or allulose)
1/2 cup (96g) swerve brown
2 tbsp (30g) egg whites
1/2 teaspoon vanilla extract
Dry ingredients:
1 cup (80g) quick cooking oats
1 cup (132g) Fit Flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
Icing (skip if just making the oatmeal cookies):
1 tbsp (15g) SF white chocolate
1 tbsp (15g) almond milk
1/4 cup (36g) swerve confectioners
Microwave at 15-20 second intervals and mixing till smooth.
First mix the wet and dry in separate bowls.
Combine.
Form 8 3-4 inch disks (1/2 inch in height)
Bake at 375 10 min
Let cookies cool before icing them.
