Gnocchi Ingredients:
1 cup (250g) canned diced potatoes (drained)
1 egg
1/2 tsp Salt
1 & 1/4 cup (165g) FIT FLOUR (6x the protein and 1/3 the carbs of all purpose flour)
Cheese Sauce Ingredients:
1/4 cup (60g) fat free milk
1/4 cup (55g) fat free cottage cheese
1/4 cup (28g) fat free cheddar
1/2 tsp cornstarch
1/2 tsp salt
Instructions:
In a blender combine potatoes, egg, and salt.
Pour mixture into a bowl.
Slowly add in FIT FLOUR
Once well incorporated, add to a ziplock and cut a small hole.
Drop in small bits (1/2 inch diameter and an inch long… doesn’t have to be perfect) into boiling water.
2-3 mins they should float. That means you can pull out of the water.
Make the sauce.
Add all ingredients to a blender. Blend.
Simmer sauce while tossing the gnocchi.
