Instructions:
First, Dice/cube 1 lb chicken thighs and marinate in pickle juice for 1+ hours (I had them in for 5 hrs) and then strain away the excess pickle juice.
Second, put chicken in a bowl with 3 tbsp (45g) of egg beaters and massage.
Third, Drop the dredged chicken in a gallon-size ziplock containing:
1 tbsp of Swerve confectioners sugar
1 tsp salt
1 tsp paprika
1 tsp ground pepper
Fourth, Shake up the chicken to get it well incorporated.
Fifth, spray on some cooking spray and airfry at 360 for 12-15 mins giving it a nice shake halfway through.

1/3 cup Light Fresh Dressing
2 tbsp honey
1 tsp apple cider vinegar
