Recipe Instructions:
Mix dry ingredients in a bowl:
1/4 cup (20g) special dark Hersey cocoa
1/2 tsp baking soda
1/2 cup swerve Granulated
1/2 cup + 2 tbsp (82g) FIT FLOUR
Add wet ingredients:
1 egg yolk
5 tbsp (70g) light butter
I used my hands to mix and knees until well combined.
Roll it out on parchment paper 1/4 inch in height. I laid down chop sticks next to dough to give an even spread. Throw a little extra Power Flour on top to prevent sticking.
Use a small lid to a cup 1.5-2 inch diameter to cut circles.
Repeat until you use all dough.
Bake at 375 for 9-10 min
Let them cool & firm up before icing
Icing:
4 tbsp light butter
1 cup swerve confectioners
1 tbsp sugar free vanilla pudding powder
Mix it up and let it sit in fridge for 5 min to set
